No Bean Chicken Chili

Serves 4-6, 40-50 minutes cook time.

1/4 slab bacon, diced
1 large yellow onion
4 cloves of garlic smashed
2-3 reserved bacon grease
3 large boneless skinless chicken breasts, salt and peppered then diced
3 medium zucchini, diced finely
1-15 oz can of corn kernels (it might need an extra one)
1-15 oz can of creamed corn
2 tablespoons tomato paste
20 oz roasted tomatoes chopped with green chilies
1/4 cup chili powder
1.5 tablespoons cumin
2 bayleaves
2 tablespoons oregano
2 chipotle peppers in Adobe sauce, diced (omit if your not fond of spiciness) 
2 tablespoons of the adobe sauce
1-12oz bottle of beer
1 cup vegetable broth 
Mixed cheese to top

1. In a large pot fry bacon until half way cooked. Add onions and garlic, cook until translucent. Remove bacon, onions and garlic and set aside.
2. Add reserved bacon grease and diced chicken. Cook for two minutes and add onion mixture back into the pot.
3. Pile on the remaining ingredients in order, stirring occasional.
4. Bring to a boil and reduce heat to medium low and allow to simmer for 30 minutes.
