Simple Grilled Chicken with Sauteed Zucchini and Rice

I stuck pretty close to the recipe. Although there are a few thing I did change. Like omitting the lemon, and substituting Rosemary for Thyme. 

To start; I marinaded boneless skinless chicken tenderloins in Wish Bone's zesty Italian dressing for 24 hours. .
Before putting the chicken on, I started the rice:

1 cup of chicken stock or broth.
A little bit of olive oil (approx 1 tablespoon)
few shakes of S&P
and topped the measuring cup off at 1 1/4 cups with water.

Add to the pot, and bring to a boil.
Personally, we like Jasmine rice and chose that grain for this dish.
Once liquids are boiling, add 1 cup of rice to pot.
Reduce to a simmer and cover dish. Allowing a small amount of steam to escape. I like to use a towel.

Red onion was also added to the vegetable selection for more variety.
Remember to cook the chicken low and slow. 

Rice will be fully cooked when all liquid has been absorbed. Enjoy!
