B/Fast Pie


The appropriate time for pizza is anytime!  Who can refuse this?! Breakfast Pizza. BTW this has no affiliation with my place of employment.

Dough
2 Cups Flour
Majority of your packet of yeast
¾ teaspoon Salt
2 teaspoon Sugar
1 Tablespoon and 1 teaspoon oil
2/3 Cups of HOT water
Mix your dry ingredients together before adding the wet. Form into a ball and roll out the dough until it is a little thinner than regular pizza dough. Put your dough onto the pan.
Preheat Oven to 325F.
Melt 2 Tablespoons butter.
Brush butter onto the dough, lightly.
Beat 4 Eggs + 3Tablespoons Milk
Place them into a bowl with which ever you are putting on your pie. Add additional toppings ie. Bacon, Green Peppers. 
Mix well and spread it onto the dough. Bake for 20 Minutes.

Albondigas( meatball) Soup

This is a rave! I love, love, love, loved this! This doesn't taste like taco bell, or a Mexican bosco. (Yes they make them) This soup kind of reminds me of maybe gołąbki ( pronounced gumkey, is the polish version of rolled cabbage) with out the cabbage, or even un-stuffed pepper soup without the peppers. What ever it is to you, its damn good!

Albondigas Soup
YUMMMMMMMY!


1 Large Tomato
2- 32 oz(2 lb) Beef Broth cartons
8 oz of your favorite Salsa
1/2 of a Large Onion, chopped
1/4 teaspoon dried Basil and Oregano, each
Pepper
1/4 Cup and 2 Tablespoons White Rice 
3 Cups Water
-Meatballs-
1 lb Ground Beef
3 oz Pork Sausage
1/4 Fine chopped Large Onion
1 Egg
Pepper
1/8 teaspoon Garlic Powder
 3 Tablespoons Milk (Dont ask the significance of it)
A few good shakes of dried Basil
1/4 cup and 2 Tablespoons Cornmeal

  1. In a small pot, boil enough water to cover your tomato. Pop the tomato in. Don't go far! As soon as the skin of the tomato cracks and peels, take it out of the water.
  2. Peel and chop your mater(Tomato) and throw it in the stock pot along with your Beef Broth, Salsa, 1/2 of chopped Onion, Basil, Oregano & Eyeballed Pepper. Bring to a boil and simmer for 20 minutes.
  3. In the mean time combine all meatball ingredients and mix by hand. Form SMALL meatballs from mixture. 
  4. Add meatballs, rice and water; Simmer and cover for at lest an hour.

Well Endowed Chili with Coby Jack Cheddar Biscuits.


I don’t think you are ready for this challenge.
Well Endowed Chili

1 Lbs Ground Beef
2 Italian Sausage Links, uncooked, and decased
1 can Kidney Beans, drained
1 can spicy Chili Beans, with sauce
1 can (28 oz) Diced Tomatoes
1  can (6oz) Tomato Paste
½  of each Yellow Onion, Yellow, Red, Orange, and Green Peppers. Chopped.
1 small can Green Chilies
2 cubes Beef Bouillon
¼ cup Beer
2 Tablespoons Chili Powder
1 and ½ teaspoon of the following: Worcester Sauce, Minced Garlic, dried Oregano, and bacon bits.
1 teaspoon Ground Cumin and Hot Sauce
½ teaspoon of the following: Salt, Black Pepper, Cayenne Pepper, Paprika, and Sugar.
  1. Brown your meat on medium heat.
  2. Drain grease
  3. Add everything else.
  4. Simmer for at lest two hours.
 Chili
Coby Jack and Cheddar Biscuits
1 teaspoon Olive Oil
2 Cups all purpose Flour
1 Tablespoon Baking Powder
1 ½ teaspoon dried Parsley
1/8 teaspoon ground Thyme
1 teaspoon Sugar
1 teaspoon Salt
1 Cup shredded Colby-Monterey Jack Cheese
¼ Cup shredded Sharp Cheddar Cheese
6 Tablespoons Butter
1 Cup Milk
  1. Preheat oven to 400, and grease baking sheet with Oil.
  2. Mix dry Flour, Baking Soda, Parsley, Thyme, Sugar, Salt and Cheese in a mixing bowl.
  3. Cut Butter into dry mixture and continue to mix until course.
  4. Add milk. Mix. As one would expect.
  5. Form balls and place on to baking sheet. Cook for 25 minutes. 
Biscuits
Both happily together in one bowl with a blanket of cheddar.

Finger Lick'in Good Pulled Pork and Murdered Lemon Meringue Pie.


Pulled Pork
Yummm! Yum, yum…yum yum!!!!
3 Lbs Pork Butt Roast
½ Bottle of your favorite BBQ Sauce
1 Tablespoon Minced Garlic
1 teaspoon Liquid Smoke
Salt and Pepper
  1. Rub your meat down.
  2. Throw her in the slow cooker with remaining ingredients, on low for 10-12 hours. 
  3. Half way through the time frame, turn the meat over so that it may be evenly cooked, and tenderized. Other than that, NO PEAKING! I know it looks good. 
  4. When done cooking take two forks to shred the meat. This should be effortless.

I added 3/4 of a bottle and it ended up a bit too liquidy, unless that is the way it is supposed to look.

Lemon Meringue Pie aka Pie Murder Number Two
The BF and I both beat the meringue by hand, and with a mixer. Please don’t laugh. And I put the poor sucker in a tart pan.
When it first came out of the oven the meringue fulfilled the entire pan. =[

Homemade single crust, (it would be wise to bake it before hand)
Juice and zest of 2 lemons,
(You are going to need ¼ cup of water)
1 cup sugar, (for the pie filling)
2 tbsp flour,
3 tbsp cornstarch,
1/4 tsp salt,
4 egg whites,
4 egg yolks
2 tbsp butter,
6 tbsp sugar.(for meringue)


  1. Preheat your oven to 350°F.
  2. To a medium saucepan, add your sugar, flour, cornstarch, and salt. Mix together.
  3. Grab your water, lemon juice, and lemon zest. Combine them all together( in a sauce pan). Pour over your dry mixture and place over medium heat.
  4. Stir constantly until it comes to a boil. Keep stirring and add your butter. Stir until your mixture begins to thicken.
  5. Grab your beaten egg yolks. Pour about 1/2 cup of your lemon mixture over your beaten egg yolks. Mix together well.
  6. Pour your egg mixture back with the rest of your lemon mixture into your saucepan. Mix until it is nice and thick.
  7. Grab your egg whites. Beat until it starts becoming foamy. Add your 6 tbsp of sugar and continue to beat. If you have an electric mixture perfect if you don't you're arm is going to be tired. Beat your egg whites until they start to form stiff peaks.
  8. Pour your lemon filling into your pie crust.
  9. Layer your meringue over your lemon filling. To create the waves just stick and spoon into your meringue and pull it back in whatever pattern you'd like.
  10. Place in your preheated oven and bake for only 10 minutes. The top of your meringue will brown and it will be done. Obviously if you wanted to make a meringue pie like the ridiculous ones you see at restaurants you'll need to use a few more egg whites.

    Artichoke Pasta

    Good Afternoon, or Good Morning to me.

    I hope everyone is having a lovely day. Today's dish is inspired by a friend. She made something similar to this one day we had an all day affair making Tamales. Have a great lunch. =]


    Artichoke Pasta

    Cooked Pasta
    Olive Oil
    Onion
    Garlic
     Marinated Artichokes, quartered.
    S&P
    Parmesan 

    1. Cook your pasta. ( If using Spaghetti or Angel Hair, break into thirds before boiling) Rinse in cold water.
    2. In frying pan fry up Onion and Garlic with Olive Oil. Add Artichokes to frying pan.
    3. Combine Pasta and frying pan contents when all is heated.
    4. Season with S&P and Parmesan.

    I did not measure anything because I was cooking for myself. And Mushrooms are good in this too. 
    Oh! and this is what the Potato Soup turned out.

    Last Night's Pizza Pie and Apple Mango Pie

    I made pizza once again for dinner. This time with the company of the "Hand Mixer" and a rolling pin. =]. This made life quite a bit more easier when in comparison from before. Half of the pizza is Pepperoni, Mushrooms, and Black Olives. The other half is Mushroom, Black Olives, Red Onion and Yellow Mild Peppers.     First step to making anything; read the directions. I searched the internet for an hour looking for a recipe that combined apples and mangos. The combine the two in candy why could I not in a pie? To tell you the truth, it is good. But, my not thinking everything through mind, I only had one apple and one mango. YES one apple and one mango. That is why it is soo flat. But alas, it is my first pie. Please give it a little respect. 

    Pie Crust
    2 1/2 Cups of all- purpose Flour, plus extra for rolling
    1 Cup or 2 sticks of unsalted Butter
    1 teaspoon Sugar
    1 teaspoon Salt
    6-8 Tablespoons of Ice Water

    1.       Cut the sticks of butter into 1/2-inch cubes and place in the freezer for 15 minutes to an hour (the longer the better) so that they become thoroughly chilled.

    2.      Combine flour, salt, and sugar in a food processor; pulse to mix. Add butter and pulse 6 to 8 times, until mixture resembles coarse meal, with pea size pieces of butter. Add ice water 1 Tbsp at a time, pulsing until mixture just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready. If the dough doesn't hold together, add a little more water and pulse again.

    3.      Remove dough from machine and place in a mound on a clean surface. Gently shape into 2 discs. Knead the dough just enough to form the discs, do not over-knead. You should be able to see little bits of butter in the dough. These small chunks of butter are what will allow the resulting crust to be flaky. Sprinkle a little flour around the discs. Wrap each disc in plastic wrap and refrigerate at least 1 hour, and up to 2 days.


    4.      Remove one crust disk from the refrigerator. Let sit at room temperature for 5-10 minutes in order to soften just enough to make rolling out a bit easier. Roll out with a rolling pin on a lightly floured surface to a 12-inch circle; about 1/8 of an inch thick. As you roll out the dough, check if the dough is sticking to the surface below. If necessary, add a few sprinkles of flour under the dough to keep the dough from sticking. Carefully place onto a 9-inch pie plate. Gently press the pie dough down so that it lines the bottom and sides of the pie plate. Use a pair of kitchen scissors to trim the dough to within 1/2 inch of the edge of the pie dish.

    5.      Add filling to the pie.

    6.      Roll out second disk of dough, as before. Gently place onto the top of the filling in the pie. Pinch top and bottom of dough rounds firmly together. Trim excess dough with kitchen shears, leaving a 3/4 inch overhang. Fold the edge of the top piece of dough over and under the edge of the bottom piece of dough, pressing together. Flute edges using thumb and forefinger or press with a fork. Score the top of the pie with four 2-inch long cuts, so that steam from the cooking pie can escape.

    Apple Mango Pie
    Single Crust,
    Pecan Crumb Crust,(I didnt use)
    3 Mangos,
    7-10 Granny Smith Apples,
    1/2 cup brown sugar,
    2-3 tbsp corn starch
    1 tsp cinnamon,
    1/2 tsp nutmeg,
    1 tsp lemon zest,
    Juice of 1 lemon. 
    1. Cut up the mangos and Apples. How to Cut a Mango 
    2. Grab a large bowl and mix your apple slices and mango pieces together.Grab the rest of your ingredients: 1/2 cup of brown sugar, 1 tsp cinnamon, 1/2 tsp nutmeg, 2-3 tbsp cornstarch, 1 tsp lemon zest, the juice of 1 lemon.
    3. Mix all your dry ingredients together and then mix it in with your fruit. Add your lemon juice and mix thoroughly. Allow to juice for up to half an hour, and while it's juicing, prepare your crumb crust.(Which I did not use) Preheat your oven to 400°F.
    4. Grab your crust and your fruit mix.
    5. Place your fruit mixture in your crust and grab your crumb mixture you prepared earlier.
    6. Crumble your crumbs over your pie. If you feel your pie filling is too liquidy add more crumbs to soak it up. Place in your oven. Ideally you'd do this half way through your bake time.
